Not another boring breakfast...

Before I tell you what this Breakfast Beauty consists of let me give you some background onto why I stumbled across this angelic beauty.

At the beginning of the year I made a resolution to get healthier and stay fit. Everywhere I turned I found that my best breakfast and lunch companion- Bread was not voted most likely to help you lose weight in high school. So I vowed that instead of cutting it out all together (I mean I'm only human) I would cut back and eat it only once a week.

Here I am two months into 2018 and I'm sticking to my resolution. However, finding alternatives for breakfast is not that easy. I'm not a fan of cereal (I don't like milk weird I know) , a yoghurt doesn't do it for me six days a week and a full English is often time consuming and can leave me feeling bloated.

So it was last Sunday when I stumbled across my Breakfast 'Taco'. My stomach was craving turkey bacon and scrambled eggs. But, not being that much of a multitasker (sorry girls letting the side down) whilst I whisking my eggs my turkey bacon crisped up a little too much for my taste and formed a sort of taco shell. Not really liking burnt food (I need to inform you I normally like my food anaemic so burnt for me is slightly black around the edges) I turned lemons into lemonade and scooped my scrambled eggs into the taco shell and chowed down on my culinary dreams.

 

Recipe

3 Rashers of Turkey Bacon

2 Meduim Eggs

2 Knobs of Butter

Salt and Pepper for seasoning.

For The Brilliant Bacon Shells...

  • Preheat grill to 220ºc

  • Place three rashers of turkey bacon onto a baking tray and place in the grill.

  • Remove once bacon has started to curl up at the edges.

My Mothers Superb Scrambled Eggs...

  • Melt the butter in the pan.

  • Whilst the butter is melting crack two eggs into a dish add as much salt and pepper as desired and whisk until the eggs and whites have blended.

  • Once the butter has melted pour the egg mixture into the pan and whisk until the mixture resembles scrambled eggs.

Place the bacon shells on a plate and scoop the scrambled eggs into the centre and enjoy.

 

The Verdict

Not to blow my own trumpet but toot toot 🎺. I am impressed with this dish, it is my second time making it (the first time I didn't take any pictures, regretted straight away) and it is incredibly easy to make. I feel like after eating this dish I started my day of perfectly. I had my protein hit straight away (from the scrambled eggs and the turkey bacon) which my body applauded me for and it still felt like a naughty treat which satisfied my need to rebel against my healthy diet. This dish is definitely instaworthy (if you do make it send me a picture on instagram- samanthalouiselomax) Bonus is that there is not much cleaning up after it! But is it a weekday or weekend breakfast treat? Although it is easy to make and assemble it's not a quick breakfast. If I'm working I wouldn't make it during the week (I love my bed and my makeup more than breakfast) but if you are willing to get up and make a bacon taco than go for it you will not regret it. I will definitely be making it on the weekend and next time I would experiment with different fillings- next time I might try crushed avocado, chilli and radish.
